Chocoholics unite! The naturally-vegan, antioxidant-rich cocoa bean has been worshiped for centuries. In this class students will explore this bliss-causing ingredient in its many forms: rich brownies, classic chocolate chip cookies, fudgy cupcakes, and more. You’ll learn how to properly temper chocolate without a thermometer, make melt-in-your-mouth dairy-free ganache, and pipe elegant frosting decorations. Naturally, we’ll do it the NGI way, with wholesome, vegan ingredients, and no margarine or white sugar in sight. Come happy, leave euphoric.

About the Instructor

Cheryl Perry is trained chef and graduate of the Natural Gourmet Institute. She has over 20 years experience working in New York City as a culinary instructor, business owner, and food service consultant. She is the co-creator of Pie Corps, a savory and sweet pie company that features the use of high-quality, fresh, whole ingredients.
