Our exclusive summer programming at Natural Gourmet Institute combines the best of health and nutrition education with practical, hands-on workshops. All of our courses are rooted in founder Dr. Annemarie Colbin’s Seven Principles of Food Selection which state that food should be whole, seasonal, local, traditional, balances, fresh, and delicious.

We’ve curated a selection of our most popular programs to build a series of immersion programs: Food as Medicine, Food Therapy, and From Farm to Table. Each one focuses on a specific area of food, health, and sustainability. All classes are available a la carte at their original prices.


Food as Medicine Immersion, July 10 – August 4

Skill level: Intermediate and up

Prerequisites: Familiarity with culinary techniques and processes recommended.

Ideal for home cooks, private chefs, health coaches, culinary program graduates, nutritionists, and medical professionals.

This program explores the relationships between food, nutrition, and wellness — specifically, how the foods we eat impact our health. Part one, Food Therapy,  explores the differences between “illness” and “disease”, the relationship between food and health, and the cooking concerns for people with various illnesses. Part two, Culinary Nutrition, expands on Food Theory with in-depth, hands-on programming providing students with the ability to incorporate the fundamentals of nutrition into their culinary perspective.

Food Therapy Immersion, August 7 – September 1

Skill level: Beginner

Prerequisites: None

Ideal for individuals committed to learning the fundamentals of healthful cooking and interested in understanding the relationship between food and health.

This program guides individuals through the basics of cooking through the application of cooking techniques and food nutrition to more healthful, sustainable eating. Starting with the 2-week Intensive basic cooking course, students will learn the fundamental skills of healthful cooking, including knife skills, culinary techniques and processes, and global cuisines. This preparation is perfect for the more rigorous Food Therapy kitchen labs. Food Therapy explores the differences between “illness” and “disease”, the relationship between food and health, and the cooking concerns for people with various illnesses.

From Farm to Table Immersion, August 7 – September 1

Skill level: Intermediate and up

Prerequisites: Familiarity with culinary techniques and processes recommended.

Ideal for individuals interested in a complete view of food as health programming.

This program includes Natural Gourmet Institute’s signature programming, including everything from food theory to technique. The program highlights our health-supportive, sustainable, plant-based theory. You’ll start with Vegan Desserts, a specialty three-day program focusing on creating vegan and dairy-free desserts made with whole and minimally-refined ingredients. Next is our three-day Ayurveda program, where you’ll learn how to prevent illness and promote healing through proper diet and lifestyle, connecting with your consciousness, and harmonizing body and mind. Then we’ll take you to the farm where you’ll get your hands in the dirt and learn first hand how the food gets to your table, and how to source food in sustainable, responsible ways. The program wraps up with Food Therapy, a two-week rigorous kitchen lab. You’ll explore the differences between “illness” and “disease”, the relationship between food and health, and the cooking concerns for people with various illnesses.
