Spend Your Summer at NGI Posted May 5, 2017 The days are getting longer, the weather is getting warmer, and our favorite produce is starting to show up at the farmer’s market. Summer is around the corner and it is our favorite season for selecting fruits and vegetables. From leafy greens, to juicy berries, to varieties of tomatoes, there is so much to choose from and many fun ways to make use of summer’s bounty without letting anything go to waste. Here are some of our favorite tips for maximizing the use of summer produce: Lay berries in a single layer on cookie trays and freeze for 2 hours. Then transfer to airtight freezer bags and enjoy all season without them going bad. Store tomatoes stem end down to keep them from spoiling quickly. This prevents air from entering and moisture from exiting the scar where the tomato once attached to the vine. Place herbs like parsley and cilantro in a glass or vase in the refrigerator as you would with flowers. Then drape a baggie on top of them to extend their shelf life. Take your leftover veggies at the end of each week and make a quick vegetable stock. Don’t throw away summer squash blossoms. Use them in a salad or make a bruschetta out of them.
